Vegan Asian Noodle Soup

My friends and I we're addicted to The Sims for a short time in middle school. We played god after school every day while eating alliterated food like Bagel Bites and Soup Secrets. Thankfully we had phenomenal 12-year-old metabolisms.

I can't imagine what we found appealing about either of these things. Eating processed foods while taking care of someone who isn't myself sounds terrible. It also sounds like every episode of Teen Mom I've ever seen. And I've seen all of them.

Soup Secrets consists of clear broth and highly processed noodles. As a general rule, I try to stay away from any type of food with the word "secret' in the name, so I made my own version.

Brown rice noodles, edamame, broccoli and green onions make this a low calorie, super-filing meal.

Almost everything I cook has less than 10 ingredients and takes about 10 minutes to make, and this is no exception. I make a giant pot of it and eat it for days and days, because I'm a lazy vegan with very low requirements for variety.

Vegan Asian Noodle Soup

Ingredients:

  • No-Beef Bouillon Cubes (Whole Foods)
  • Edamame
  • Thin Wheat Rice Noodles (Asian foods aisle)
  • Broccoli florets
  • Additional add-ins: carrots, peppers, mushrooms, kale, tofu cubes, onions

Instructions (6-8 servings)

  • Bring water to a boil and cook one box of thin wheat rice noodles for 2 minutes and then strain
  • Boil edamame for 4 minutes and drain
  • Heat 10 cups of water and dissolve 5 vegan bouillon cubes
  • Very lightly sautee or steam broccoli (any any other vegetables you want to add)
  • Mix noodles and vegetables into broth
  • Garnish with chopped scallions
